Blue pea is very popular due to its ability to effectively color blue and because by changing the pH of the infusion, this blue can change to purple or pink.  Plants named "shankpushpi", such as blue pea, indicate an ability to improve cognition. The modern term is "nootropic". The famous pigments are excellent for the health of the blood vessels (blood capillaries) of the brain and kidneys.  Considered a kidney tonic, it is also considered a sexual tonic.

The petals of butterfly pea flowers are dried naturally in the sun and produce beautiful shades of blue, from turquoise to dark as they are soaked. When butterfly pea flowers are diluted and combined with acidic ingredients (a few drops of lemon juice), the substance transforms into a color that ranges from magenta to vibrant purple to a soft purple. These flowers come from a cooperative in central Thailand that employs mainly women, many of whom are elderly. They compile flowers from over 100 micro-farms (multi-crop farming), where flowers grow without pesticides or artificial fertilizers.

Recommendations:

For an infusion: 3-5 flowers in 240 ml of water. Steep for 8 to 10 minutes.

This infusion is traditionally served with brown sugar and a few drops of lime. The edible flowers turn a dark blue color and turn bright purple when you add citrus.

Ingredients

  • 1 to 2 teaspoons dried butterfly pea flowers per cup
  • 250ml hot water

Optional ingredients

  • Honey, sugar or other sweeteners
  • Lemon or lime juice
  • 1 tsp fresh mint leaves
  • 1 tsp lavender (either lavender or mint, not both)

Preparation

  1. Soak the blue butterfly polka dot flowers in 250ml of hot water. If you want to add lavender, this is where it happens.
  2. Let it steep for three to five minutes until the water turns blue.
  3. Enhanced with a little coconut syrup and mint or lime.

A beautiful visual effect: adding a few drops of lemon juice changes the color of the infusion to purple. For a light red shade, you can use pink hibiscus flowers instead of lemon. In mixology, the unusual play of colors is a real highlight. Create a refreshing summer cocktail by infusing 800 ml of gin for around 40 minutes, then adding 2 cl of this gin to tonic.
