The seeds are collected from the pod of the milk thistle once it is ripe and dried. They promote liver health and have been used historically as a liver tonic and in various digestive formulas.

Use the whole seeds to sprinkle on salads, sandwiches, vegetable milks, etc. or grind them into powder to incorporate them into infusions, baked goods and smoothies. The seeds have a slightly bitter and oily taste. They are also an excellent nutritious and tasty substitute or supplement to flax, sesame, hemp and other seeds.

The milk thistle infusion distills mild, slightly sweet flavors. It is often compared to a dandelion infusion with light woody notes and more intense floral notes.
